"Harrington" Salad with Grilled Chicken

A great restaurant in Boston used to make a version of this salad, though I am not sure if they still do.  Anyhow, it is very refreshing and so so so yummy!

Salad:
2 heads romaine, chopped into 3/4 inch strips
1/2 red onion, sliced thinly
1/2 creamy feta cheese
1 english cucumber, slices and then quartered
1/4 kalamata olives, halved lengthwise
10 mint leaves, chopped into strips

Dressing:
1/4 olive oil
1/4 lemon juice
pepper

2 chicken breasts, pounded thinly and grilled

Enjoy!
